1-Pan Garlic Shrimp And Ramen Noodles

Nothing beats a one-pan meal when you need a satisfying dinner on a busy weeknight. This garlic shrimp and ramen noodle recipe is made in a single skillet, minimizing cleanup while delivering rich, layered flavors. In just 30 minutes, you’ll have a delicious, balanced dish with juicy shrimp, tender noodles, and broccoli, all covered in a sweet, salty, spicy, and tangy sauce. So when the week gets hectic and takeout seems tempting, skip the call and try this instead.

Ingredients

  • 2 tablespoons vegetable oil

  • 2 tablespoons minced garlic

  • 1 tablespoon minced ginger

  • ½ cup thinly sliced scallions

  • 1 pound large shrimp, peeled and deveined

  • 2 (3-ounce) packets instant ramen noodles

  • 4 cups vegetable broth

  • 2 cups small broccoli florets

  • 1 tablespoon soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon honey

  • ½ teaspoon sesame oil

  • ½ teaspoon crushed red pepper

  • 1 tablespoon cornstarch

Directions

  1. Start a large skillet over high heat and add the vegetable oil.

  2. Add the garlic, ginger, and scallions, and cook for 2 minutes, until fragrant.

  3. Next add the shrimp and cook for around 3 minutes, or until just cooked.

  4. Remove the shrimp from the skillet.

  5. Add the ramen noodles and broth to the pan.

  6. Once the broth is boiling, add the broccoli and cook the noodles and broccoli for around 6 minutes, or until the noodles are done.

  7. Stir in the soy sauce, rice vinegar, honey, sesame oil, and crushed red pepper.

  8. In a small bowl, make a slurry with the cornstarch and a tablespoon or two of water.

  9. Add the cornstarch slurry to the pan and mix well. Cook until the sauce thickens.

  10. Return the shrimp to the pan and toss to coat with sauce. Remove from the heat.

  11. Serve immediately, garnished with thinly sliced scallions, crushed red pepper, and toasted sesame seeds, if desired
