  • 3 tablespoons extra-virgin olive oil, divided

  • 6 medium cloves garlic, sliced, divided

  • 4 cups small broccoli florets

  • ½ cup diced red bell pepper

  • ½ teaspoon salt, divided

  • ½ teaspoon ground pepper, divided

  • 1 pound peeled and deveined raw shrimp (21-30 count)

  • 2 teaspoons lemon juice, plus more to taste

Directions

  1. Warm 2 tablespoons of oil in a large pot over medium heat. Stir in half the garlic and sauté for about 1 minute, until it starts to brown. Add the broccoli, bell pepper, and 1/4 teaspoon each of salt and pepper. Cover the pot and cook, stirring occasionally and adding 1 tablespoon of water if the pot becomes too dry, until the vegetables are tender, about 3 to 5 minutes. Transfer the vegetables to a bowl and keep them warm.
