Ingredients
3 tablespoons extra-virgin olive oil, divided
6 medium cloves garlic, sliced, divided
4 cups small broccoli florets
½ cup diced red bell pepper
½ teaspoon salt, divided
½ teaspoon ground pepper, divided
1 pound peeled and deveined raw shrimp (21-30 count)
2 teaspoons lemon juice, plus more to taste
Directions
Warm 2 tablespoons of oil in a large pot over medium heat. Stir in half the garlic and sauté for about 1 minute, until it starts to brown. Add the broccoli, bell pepper, and 1/4 teaspoon each of salt and pepper. Cover the pot and cook, stirring occasionally and adding 1 tablespoon of water if the pot becomes too dry, until the vegetables are tender, about 3 to 5 minutes. Transfer the vegetables to a bowl and keep them warm.
Raise the heat to medium-high and pour the remaining 1 tablespoon of oil into the pot. Add the rest of the garlic and sauté for about 1 minute, until it starts to brown. Toss in the shrimp along with the remaining 1/4 teaspoon of salt and pepper, and cook, stirring, for 3 to 5 minutes, or until the shrimp are just cooked through. Return the broccoli mixture to the pot, drizzle with lemon juice, and stir everything together until well combined.
