Honey-Mustard Roasted Cabbage Wedges

Ingredients

  • 1 small head green cabbage (2–2½ pounds)

  • 3 tablespoons Dijon mustard

  • 2 tablespoons honey

  • ½ teaspoon plus ⅛ teaspoon salt, divided

  • ½ teaspoon ground pepper

  • ½ teaspoon garlic powder

  • ¼ cup extra-virgin olive oil

  • Chopped fresh flat-leaf parsley for garnish (optional)

Directions

Step 1

Preheat the oven to 425°F and line a large, rimmed baking sheet with foil. Remove any wilted or damaged cabbage leaves, then cut the cabbage into 8 wedges, about 2 inches wide, keeping the root end intact.

Step 2

In a small bowl, whisk together 3 tablespoons of mustard, 2 tablespoons of honey, and ½ teaspoon each of salt, pepper, and garlic powder. Set aside 2 tablespoons of the mixture in a separate bowl. Gradually whisk ¼ cup of oil into the remaining mustard mixture, then brush it evenly over both sides of the cabbage wedges. Arrange the wedges along the edges of the prepared baking sheet.

Step 3

Roast for 30 minutes, then flip the wedges and continue roasting for another 15 minutes, or until they are tender and golden brown. Sprinkle with the remaining ⅛ teaspoon of salt and drizzle with the reserved honey-mustard mixture. Garnish with parsley, if desired.
